Evaluation:
Appearance: The Chocolate Cherry Ripes were all the same shape and size. I achieved this by precisely measuring out three teaspoons of mixture into each ball. I spent time rolling each ball until they were perfectly rounded. The chocolate on the outside was not as smooth as I had wanted. I did not melt the chocolate until it was a smooth and runny consistency. The lumps in the chocolate looked like they were designed to be there. They did not create a messy or untidy effect. The chocolate had a very high gloss. The mixture on the inside was a nice light pink. I achieved this by not putting too much food dye in at a time. I gradually added more and more until it was satisfactory.

Texture: The Chocolate Cherry Ripes were very soft. They were not crunchy or crisp. I achieved this by using the correct ingredients. They were quite compressed and filing. This was a result of me using the correct amount of ingredients. They were moist. I accurately measured the ingredients and made sure that they were of a good consistency. When I left the ball to sit in the refrigerator I completely covered the tray with glad wrap to avoid moisture loss. They almost melted in the mouth, this was because both the butter and chocolate had low melting points. The desiccated coconut was quite chewy, however because it was fine, it was alright. The bits of glace sherries were a nice contrast to the butter and coconut mixture.

Flavour: The Chocolate Cherry ripes were very rich. They tasted very sweet and creamy. This was because I used the correct amount of ingredients.  They tasted strongly of coconut. The glace cherries added a fruity flavour to the confectionary. The ended up tasting very nice.
